Ok first off, I'm sorry for not posting more often. Its been hectic lately (crazy teachers giving me a butt load of homework/tests). And to make things more beautiful, along with my broken computer, by beloved camera died on me. **Sigh** So its a little difficult getting everything put together. But anyways.. :D

1 1/4 cups all-purpose flour
3/4 cup enriched corn meal
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup skim milk
1/4 cup vegetable oil
2 egg whites or 1 egg, beaten
These corn muffins made me happy : ) So my mom got this new silicon muffin umm "pan" thing. It looks really cool, but feels even cooler. Its soft and rubbery and red. So I was all excited about it, and wanted to make something for the morning. Whats better than muffins? Nothing, that's what. So corn muffins it was, but not just any old corn muffins, happy corn muffins : ).

Happy corn muffins
Quaker cornmeal recipe (modified)
1 1/4 cups all-purpose flour
3/4 cup enriched corn meal
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt (optional)
1 cup skim milk

Directions
Preheat oven to 400F. Combine dry flour, corn meal, sugar, baking powder and salt (if desired). Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into 12 greased or paper-lined medium muffin cups. Bake 15-20 minutes or until golden brown.

Pretty inconsiderate of teachers to ask you to actually do homework when it cuts into your baking time. Sheesh. Do I have to come down there and have a talk with them...I mean...really!!!
I love corn muffins! But happy corn muffins must be even better! Now I'm all worried that mine aren't happy...

I have some of those silicone bakeware myself (in blue) but I find that my muffins come out looking rather tiny instead of regular size (I wonder if I should fill them up more).

There's something about corn muffins I just love. When they're perfect they're not too sweet, but just sweet enough to bring out the corniness and have a wonderfully moist texture. These look delicious!
